Ingredients

  • 2 tbsp. extra-virgin olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 lb. ground beef
  • Kosher salt
  • Freshly ground black pepper
  • 1 tbsp. tomato paste
  • 1/4 c. low-sodium beef broth
  • 1 (15-oz.) can tomato sauce
  • 1 (15-oz.) can diced tomatoes
  • 1 tsp. Italian seasoning
  • 1 tsp. paprika
  • 1 c. shredded cheddar
  • Freshly chopped parsley, for garnish
  • 3 cups cooked elbow macaroni

Instructions

1. In a large skillet over medium heat, heat oil. Add onion and cook until soft, about 5 minutes. Add garlic and cook until fragrant, about 1 minute more.

2. Add ground beef and cook until no longer pink, about 6 minutes. Drain fat and return to pan. Season with salt and pepper.

3. Add tomato paste and stir to coat, then pour in broth, tomato sauce, and diced tomatoes. Season with Italian seasoning and paprika. Bring to a simmer and cook, stirring occasionally.

4. Stir in cooked pasta and cheese until pasta is heated through and cheese is melted. Garnish with parsley before serving.
