Servings: Serves 6-8


  • 8 oz pasta boiled
  • 21/4 grated cheddar cheese
  • 1/2 C parmesan Cheese
  • 2 T butter
  • 2 T flour
  • 2 C milk
  • 1/2 med onion minced
  • 1 bay leaf
  • 1/4 t paprika
  • 1 1/2 Quart baking dish
  • Salt & pepper to taste
  • 1 T melted Butter in a skillet to coat the cracker crumbs
  • 1/2 C buttered crackers crumbled


After boiling the pasta, melt 2 T of butter in a separate pan and add 2 T flour to make a rue. Whisk in 2 C of milk. Stir in minced onion, 1 bay leaf and paprika. Bring to a simmer for 15 minutes, stirring occasionally.

Stir in 2/3 of the cheese, salt and pepper to taste. Add half to the casserole dish, sprinkle with remaining cheese. Then add the rest of the mixture. Sprinkle with parmesan cheese then the topping.

Bake at 350 degrees for 30 minutes or until the cheese has melted and the top is golden brown.
