We just finished our “BLOODY” red sauce month with a Puttanesca Sauce featured in a Baked Penne. The sauce was amazing with salty goodness! We layered the penne with a Ricotta Cheese mixture with Italian herbs and spices, like a lasagna then baked it with Mozzarella cheese on top until nice and golden brown. The kids ate this one up! Easy enough for your child to assist in making it themselves. We had a” Halloween” Cupcake decorating workshop where the kids made a batter from scratch and they decorated 4 different cupcakes, a witch, mummy, skeleton and a monster…they came out adorable. Every monster was different. I love the art that came out of these!! We let the kids decorate their own masterpieces!!

This month we are featuring holiday side dishes and just prepared a Lemon Veggie Risotto. This was a great recipe because it was creamy and cheesy and one of the vegetables is broccoli…one of kids favorite. Also included is zucchini and yellow squash sautéed in olive oil and salt and pepper to taste. The kids ate this one up and they didn’t even notice that the dish was loaded with great tasting and high fiber vegetables…a holiday dish worth making this year for Thanksgiving. Of course we made a sweet and savory popcorn dish with chocolate chip morsels and maple syrup…to die for! Also included on the menu for the month is Thanksgiving Stuffing Balls, a new twist on stuffing.  This recipe is fun and made for individual servings so you don’t over eat stuffing this year that makes you want to go to bed…LOL! It’s not just the turkey! We will be featuring a Pasta Making Workshop with a Chicken Parmigiana, a Holiday Appetizer Party, featuring Phyllo dough and mini fruit cheesecakes, a great little morsel at the end of the day without easting the entire cheesecake!
