Individual Spinach Quiche

Yield: Makes about 2 cups of filling or 4-8 servings, depending on the size of your ramekin/mug


  • 1 medium onion, diced
  • 6 oz. fresh baby spinach
  • 2 eggs
  • 2 egg whites
  • ½ cup all-purpose flour
  • ½ tsp. baking powder
  • ¼ tsp. salt
  • Pinch cayenne pepper
  • 1 1/3 cups milk
  • ½ cup feta cheese


1. Preheat oven to 400 degrees. Prepare ramekins or heat-proof mugs with cooking spray.

2. In a medium frying pan prepared with cooking spray, cook diced onion over mediumhigh heat until translucent and tender. Add in fresh spinach and cook until just wilted. Set aside to cool for a few minutes.

3. In a large mixing bowl, whisk together eggs, flour, baking powder, and salt. Whisk in milk, then stir in the spinach-onion mixture.

4. Pour quiche into prepared ramekins or mugs. Top with feta cheese.

5. Bake for 15-20 minutes, or until center is set and the outside edge is golden brown.

6. Let set for 5 minutes, then slice and serve.


This recipe can also be prepared in a 10 inch quiche/tart pan or pie plate. Bake for 25 minutes.

Equipment needed: measuring cups and spoons, ramekins or heat-proof mugs, non-stick cooking spray, knife, frying pan, large mixing bowl, whisk, wooden spoon
