Servings: Makes 24 cookies



  • 1 cup flour
  • ¾ tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 14 Tbsp. butter, softened
  • 1 cup sugar
  • ¼ cup brown sugar
  • 1 egg
  • 1 tsp. vanilla
  • 2½ cups old-fashioned rolled oats


Preheat oven to 350 degrees. Coat cookie sheet with cooking spray.

Whisk together flour, baking powder, baking soda, and salt.

Beat butter and sugars at medium-low speed until just combined. Increase speed to medium and beat until light and fluffy, about 1 minute longer.

Add egg and vanilla and beat until fully incorporated. With mixer speed on low, add flour mixture and mix until smooth, about 10 seconds. Gradually add oats and mix until just incorporated.

Using 2 Tbsp. of cookie dough, shape into balls and place on cookie sheet 2½ inches apart. Using fingertips, gently press each ball to ¾-inch thickness.

Bake for 13-16 minutes, rotating baking sheet halfway through. Leave on cookie sheet to cool for 5 minutes before removing to wire rack to cool completely.


Cookies with a Twist: Lightly sprinkle sea salt evenly over flattened dough balls before baking for a sweet and salty flavor.
