Servings: Makes 24 sticks


  • 12 sticks of string cheese
  • 1 large egg, beaten
  • 2 Tbsp. flour
  • 5 Tbsp. Italian seasoned breadcrumbs
  • 5 Tbsp. panko crumbs
  • 2 tsp. Parmesan cheese
  • 1 Tbsp. dried parsley
  • Olive oil cooking spray


1. Line rimmed baking sheet with wax paper. Cut cheese in half to make 24 pieces. Put cheese pieces on the prepared sheet and place it in the freezer until the cheese is frozen.

2. Place the flour in a small dish. In another small bowl, whisk the egg. In a medium bowl, combine the bread crumbs, panko, Parmesan cheese, and dried parsley.

3. Dip the frozen sticks in flour, shaking off any excess. Dip into the beaten egg and coat with the crumb mixture. Place on the prepared rimmed baking sheet.

4. Repeat this process with the remaining cheese pieces. Place the rimmed sheet into the freezer again. (The cheese must be frozen again or it will be a melting mess before the crumbs on the mozzarella sticks are golden brown.)

5. Preheat the oven to 400 degrees. Line a baking sheet with aluminum foil and lightly coat with cooking spray.

6. Transfer the frozen cheese sticks to the baking sheet covered with foil. Spray the tops of the mozzarella sticks with a little more oil and bake in the bottom third of your oven until crisp, about 4-5 minutes. Watch them closely. You want them browned, but not a cheesy mess!
