Sweet-Spicy Barbecue Chicken Melts

Ingredients

    Filling
  • 1 1/2 lb. skinless, boneless chicken breast halves
  • 1 cup chopped fresh or canned pineapple
  • 2/3 cup barbecue sauce
  • 1/4 cup chopped pickled jalapeno peppers
  • 1 1/2 cups shredded Monterey Jack cheese
    Drizzle
  • 6 Tbsp. melted butter
  • 2 Tbsp. honey
  • 1 Tbsp. Worcestershire sauce,
  • 1/2 tsp. freshly ground black pepper.
  • If desired, top with sliced fresh jalapeño chili peppers before serving.

Instructions

Preheat oven to 350 degrees

Filling: Cook 1 1/2 lb. skinless, boneless chicken breast halves; shred using two forks. In a medium bowl combine chicken; 1 cup chopped fresh or canned pineapple, well drained; 2/3 cup barbecue sauce; and 1/4 cup chopped pickled jalapeño peppers; spoon onto roll bottoms. Top with 1 1/2 cups shredded Monterey Jack cheese.

Drizzle: Combine 6 Tbsp. melted butter, 2 Tbsp. honey, 1 Tbsp. Worcestershire sauce, and 1/2 tsp. freshly ground black pepper. Drizzle on top of rolls.

If desired, top with sliced fresh jalapeño chili peppers before serving.

Bake uncovered for 20-30 minutes.
