Southwest Taco Cupcake

Yield: Makes 12 servings



  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 Tbsp. canola oil
  • 3 Tbsp. minced green chilis
  • ¼ cup chopped red bell pepper
  • 1/3 cup tomato paste
  • 1½ lbs. lean ground turkey
  • ½ lb. lean ground beef
  • 1 Tbsp. chili powder
  • 1 tsp. ground cumin
  • ¼ tsp. cayenne pepper
  • ½ cup bread crumbs
  • ½ cup milk
  • Garnishes (see below)


Preheat oven to 350 degrees. Prepare muffin tin with cooking spray.

Sauté the onion and garlic in oil until tender. Combine the onion mixture with the green chilis, red pepper, tomato paste, ground turkey and beef, chili powder, cumin and cayenne pepper. Mix until well combined.

Add the bread crumbs and milk. Mix well.

Spoon meat mixture into prepared muffin tins about ¾ of the way full. Bake 25-30 minutes, or until cooked all the way through.

Let cool a bit before removing meatloaf from muffin tins. Garnish your savory cupcake with some of the ingredients below.


Time to decorate your savory, southwest cupcake! Here are some suggested garnishes: refried beans, sour cream, crushed tortilla chips, grated cheese, guacamole, diced, tomatoes, shredded lettuce, guacamole, cilantro.
