Potatoes Parmentier

Yield: 4 servings


  • 2 Tbsp Vegetable oil
  • 4 Tbsp Butter
  • 3 Cups Resset potatoes, peeled, 1/2 inch cubes
  • To taste Salt and pepper
  • 1 Tbsp Parsley, chopped


  1. Over medium heat, combine the oil and butter.
  2. Add the potatoes and sauté 10 to 12 minutes, or until an even golden color and completely cooked.
  3. When ready to serve, correct seasoning and toss with parsley.
