- 2 Tbsp Vegetable oil
- 4 Tbsp Butter
- 3 Cups Resset potatoes, peeled, 1/2 inch cubes
- To taste Salt and pepper
- 1 Tbsp Parsley, chopped
- Over medium heat, combine the oil and butter.
- Add the potatoes and sauté 10 to 12 minutes, or until an even golden color and completely cooked.
- When ready to serve, correct seasoning and toss with parsley.
