Pepperoni and Veggie Stromboli


  • Pizza dough
  • 1 small onion, diced
  • 1 small red bell pepper, diced
  • 1 cup mushrooms, sliced
  • Olive oil
  • 1/2 cup spaghetti sauce
  • 1/2 teaspoon dried Italian seasoning
  • Fresh basil
  • 4 ounces sliced pepperoni
  • 2 cups shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese


1. Preheat oven to 400 degrees F.

2. In sauté pan, at medium heat add olive oil then add in onion, red bell pepper and mushrooms. Sauté until veggies are cooked.

3. Punch dough down. On a lightly floured surface, roll dough into 20x8 inch rectangle. Place one rectangle on a greased baking sheet. Spread spaghetti sauce leaving a 1 inch border all the way around. Sprinkle with Italian seasoning, pepperoni, sautéed veggies, fresh basil and mozzarella cheese. Starting from a short end, roll up tightly. Pinch the seams closed. Place the loaf, seam side down, on the baking sheet. Sprinkle with Parmesan cheese. Cover loosely with oiled plastic wrap. Let stand in a warm place about 45 minutes, until doubled.

4. Bake in preheated oven for 30-45 minutes, or until golden brown.
