Pasta Patty Appetizers

Yield: Serves 6


  • 16 oz. elbow macaroni, cooked and drained
  • 4 Tbsp. caramelized onions
  • 6 Tbsp. ricotta cheese, at room temperature
  • ¼ cup Parmesan cheese, shredded
  • 1 sprig oregano, chopped
  • 2 tsp. green onions (white and green parts)
  • 4 Tbsp. curly parsley, chopped
  • 1½ cups Panko Breadcrumbs, divided
  • 2 eggs
  • 2 tsp. cornstarch
  • ½ tsp. cayenne pepper
  • ¼ tsp. turmeric powder
  • 1 tsp. freshly ground black pepper
  • 1 tsp. salt


1. Preheat oven to 400 degrees. Place a wire rack on top of the baking sheet and prepare with nonstick cooking spray.

2. In a mixing bowl, combine the pasta with the caramelized onions, ricotta cheese, Parmesan cheese, oregano, green onions, parsley, and 2 tablespoons of the breadcrumbs.

3. In a small bowl, lightly beat the eggs. Add the cornstarch, cayenne pepper, and turmeric powder. Season with salt and pepper.

4. Stir the egg mixture into the pasta mixture and combine thoroughly. Place the remaining Panko in a large shallow plate. Spray hands or plastic gloves with cooking spray. Using a metal circle cutter, form into ½ inch-thick patties and dredge with panko, covering both sides.

5. Spray each patty on both sides with cooking spray. Place on the wire rack on the baking sheet. Bake for 15-20 minutes.
