Linzer ‘Heart’ French Toast

Linzer tart, or Linzertorte, was popularized in the coffeehouses of old Vienna, Austria. It takes its name from the city of Linz, Austria, where the sweet was mass produced beginning in 1822, although the earliest recipe dates back to 1719. Today we know the recipe as a Linzer cookie: cookie sandwiches filled with raspberry jam. We have taken the old recipe and twisted it once more to create Linzer ‘Heart’ French Toast: a sweet treat to be prepared when you want to say “I love you!”

Ingredients

  • 1 ½ cups skim or low-fat milk
  • 1 egg, beaten
  • 2 Tbsp. orange juice
  • 1 tsp. vanilla extract
  • ½ tsp. cinnamon
  • ¼ tsp. nutmeg
  • ¼ tsp. ground cloves
  • 8 slices whole grain bread
  • 4 Tbsp. raspberry jam
  • 1/8 cup powdered sugar
  • Syrup (optional)

Instructions

  1. Mix the milk, egg, orange juice, vanilla extract, cinnamon, nutmeg, and cloves together in a bowl using a whisk. Spray the griddle with cooking spray.
  2. Preheat griddle for 2 minutes on medium-high heat.
  3. Dip each slice of bread into the egg mixture.
  4. Carefully, place the bread onto the hot griddle. When each slice is golden brown underneath, turn it over and cook the other side. Move to a cutting board and allow to cool.
  5. Cut a heart shape in the center of each of the 8 slices of bread. Dust 4 heart shapes lightly with powdered sugar using a small strainer and spoon.
  6. Spread the remaining 4 heart shapes with raspberry jam.
  7. Assemble by placing a powdered sugar slice on top of each slice spread with jam. Serve with syrup if desired.

Equipment needed: Measuring cups and spoons, Whisk, Mixing bowl, Sandwich spreader, Pancake turner, Griddle, Cutting board, Small strainer w/spoon, Large heart-shaped cookie cutter, Cooking spray.
