Italian Antipasto Salad

Ingredients

  • 6 cups lettuce leaves, torn
  • 8 oz. hard salami, julienned
  • 6 oz. Provolone cheese, julienned
  • 1 cup Mozzarella cheese, shredded
  • 2 medium tomatoes, chopped
  • 1 can (6oz.) black olives, pitted, drained, halved
  • 1 Tbsp. chives, minced
  • 1 can (8 oz.) tomato sauce
  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1 tsp. oregano
  • ½ tsp. garlic powder
  • ¼ tsp. pepper

Instructions

  1. Place the lettuce on a large serving platter. Arrange the salami, cheeses, tomatoes, and olives over the top. Sprinkle with chives.
  2. In a blender, combine the remaining ingredients and process until smooth. Drizzle over salad.

Equipment needed: Measuring cups and spoons, Cheese grater, Knife, Large serving platter, Blender.
