Garden Lasagna Rollups


  • 9 Cooked lasagna noodles
  • ½ C chopped Red bell pepper
  • ½ C sliced mushrooms
  • ½ C zucchini
  • 1 Lg. handful of fresh spinach
  • ½ C onion
  • 3 garlic cloves minced
  • salt N pepper to taste
  • 2T olive oil
  • 2 C mozzarella Cheese
  • 1/3 C Parmesan Cheese
  • 1 2lb. Ricotta Cheese
  • 3 Egg
  • Italian Spices
  • I jar of favorite spaghetti sauce


Chopped all veggies

Sauté Veggies with olive oil, starting with onion and garlic first over medium heat.

In a separate bowl, add Parmesan, egg and ricotta cheese along with Italian spices. Add veggies to the cheese mixture then spread evenly over all noodles and roll. Place in a casserole dish OR cupcake tins, then sprinkle with cheese….YUMMY!!
