Fijian Honey Cake

Yield: 1 loaf pan serves 10

Ingredients

  • 1 1⁄4 cups all-purpose flour
  • 1⁄2 cup granulated sugar
  • 1⁄2 cup sour cream
  • 1⁄2 cup honey
  • 1 egg
  • 1 tablespoon canola oil
  • 1⁄2 teaspoon baking soda
  • 1⁄8 teaspoon ground nutmeg
  • 1⁄8 teaspoon ground allspice (or ground cloves)
  • 1⁄4 teaspoon ground ginger
  • 1⁄2 teaspoon ground cinnamon
  • 2 tablespoons sliced almonds

Instructions

  1. Preheat the oven to 350°F.
  2. Coat a 9" x 5" loaf pan with nonstick cooking spray.
  3. In a large bowl, combine all the ingredients except the almonds and beat until well blended.
  4. Pour the batter into the loaf pan and sprinkle with the almonds.
  5. Bake for 45 to 55 minutes or until a wooden toothpick inserted in the center comes out clean.
  6. Allow to cool for 10 minutes then remove from pan to wire rack to cool completely.
