Cornbread Mix

Yield: 12 servings

Ingredients

    Dry:
  • 3 cups sifted flour
  • 3 cups yellow cornmeal
  • 1½ cups instant nonfat dry milk
  • 3 ½ Tbsp. baking powder
  • 2 ½ tsp. salt
  • 3 Tbsp. sugar (optional)
    Other:
  • ¾ cup solid vegetable shortening
  • 3 eggs, lightly beaten
  • 1 cup water

Instructions

  1. Preheat oven to 425 degrees.
  2. Combine dry ingredients and mix well.
  3. Place dry cornbread mix in a large bowl. Cut the shortening into the dry mix until it resembles coarse crumbs. Add eggs and water and mix well.
  4. Bake in an 8”x8”x2” greased pan for 15-20 minutes, or until a knife inserted into the center comes out clean.

Notes

Equipment needed: Measuring cups and spoons, Large mixing bowl, 8x8x2 inch pan

MAKE A NICE GIFT Combine all dry ingredients and place in a 3 cup airtight jar. Attach the following recipe to the jar:

Cornbread Mix

Additional ingredients: ¾ cup solid vegetable shortening, 3 eggs-lightly beaten, and 1 cup water.
